Gafr Binc - 2023
Rosé
"Gafr Binc" (pronounced Gavr Bink) Is one of our 2nd year vintages made from a blend of our Regent and Orion grape variety. The namesake of this vintage comes from the chorus of the Welsh folk song "Cyfri'r Geifr" which translates to "Counting the Goats" and also the origin of our name Tair Gafr Wines.
in 2023 the vineyard was still young and very much in the establishment phase. though the regent produced the biggest yield to date. This is down to a hot and sunny spring ensuring pollination of the grapes was completed within two weeks. The summer was very wet and windy and there was a large number of spotted wing drosophila fruit fly. Although the Regent was mostly unscathed the Orion was badly hit which was followed by botrytis. 2/3 of the Orion grapes were spoiled resulting in the decision to make a rosé.
Whole bunch carbonic maceration allows fermentation to begin in the grapes causing the grapes to burst open naturally. Native yeasts living on the grapes were allowed to ferment the sugars with no additions. The juice was left on the skins for 9 days for partial colour and tanning extraction before being transferred to stainless steel for maturing and malolactic fermentation. The wine was then gravity cleared with no addition of finings before racking and bottling.
